The lovely folks at Maytime Inn, in the pleasant Cotswold village of Asthall near London, share this excellent summer salad recipe that is easy to whip up and satisfying to eat. Maytime Inn has the idyllic setting – with the river Windrush gently flowing through the countryside a stone’s throw away, the inn is the perfect location if you want to relax and unwind in a beautiful, picturesque area. Owned and run by Dominic Wood, who bought the 4AA-star inn aged only 23, the menu focuses on the best of what the surrounding countryside has to offer.
The menu is seasonal, and focuses on fresh takes on local classics. This summer salad mixes unexpected flavours and ingredients to create a dish which feels perfect for the season.
The ingredients of the salad recipe are based on the local items found near the inn, along with the rest of the dishes served at the Maytime Inn. This salad has a variety of items in it that mix to make the perfect addition to a summer day.
Summer Salad Recipe
- 100g sugar snaps
- ½ watermelon cut it to 1” cube
- 100g Flaked almond
- 200g Feta cheese cut in to cubes
- 1 stalk of basil
- 1 stalk of mint
- 100ml pomace oil
- Roast of Flaked almonds in oven at 180 c for 6 minutes.
- Make your dressing but blending the basil and mint with a little seasoning.
- Place all ingredients in a bowl mix with the dressing and serve!
