Food stylist Colette Dike shares three lip-smacking avocado recipes for a quick and healthy fix!

Food stylist and photographer, Colette Dike, is famed for her unique and creative avocado recipes, which are artfully presented to her 117,000 Instagram followers on a daily basis. Here, Colette shares her favourite avocado recipes, created in partnership with The World Avocado Organisation.

Versatile, delicious and nutritious, avocados are loaded with heart-healthy mono-saturated fats, which means not only are they aesthetically pleasing (and great for the ‘gram…), but they can help to maintain a normal blood cholesterol level and lower the risk of heart disease too.

The Legendary Xavier Super Smoothie

Ingredients:

1 avocado, flesh from
1 tbsp. chia seeds
1 tbsp. hemp seeds
1 tbsp. oatmeal
2 fresh (pitted) dates
125 ml almond milk (unsweetened)
125 frozen blueberries

Toppings: hemp seeds / raspberries / chia seeds / avocado / rose petals / puffed grains

Method:

Blend all the ingredients in a food processor until smooth. Add toppings and serve immediately.

The Classic Tuna Toast (recommended from Colette)

Ingredients:

1 avocado, in slices
2 whole grain bread slices
1 can tuna, packed in water, drained
2 tbsp. hummus
1 tsp. curry powder (+ extra)

Toppings: baby basil leaves and / or cress

Method:

In a medium bowl, mix tuna, hummus and curry powder. Add salt and pepper to taste.
Toast the bread. Spread tuna mixture on the toast.
Top with avocado slices and baby basil or cress.
Decorate your toast with extra curry powder – I love this colour!

Protein-Powered Superfood Breakfast Toast

Ingredients:

45 ml olive oil
4 large eggs
2 avocados, pitted, peeled and sliced
4 slices whole-wheat bread, toasted
Salt and pepper
Mixed greens, washed and drained
150 g cherry tomatoes, halved

Method:

In a frying pan, heat the oil over medium-low heat and fry the eggs.
Place avocado slices on each piece of toast and carefully top with a fried egg.
Season with salt and pepper.
Serve with the mixed greens and cherry tomatoes
